Recipe and First Official Post
















My Dad's a chef and I'm of Indonesian - German stock,both of which are peoples that absolutely ADORE their food.Unfortunately,I got the Indo appetite and height and the German build and metabolism........my sister got the Indo metabolism and build - and the German height.Oh well,I shouldn't torture myself because she IS 7 years younger than me too,so she has youth on her side ;P

Anyways,I digress.I absolutely adore baking and cooking,I fancy myself as a bit of a Nigella,in fact I think I could give her a run for her money,which is probably why I'm this size! No more though! I bought my last pair of size 22 jeans on Thursday.

So obviously I am following WW,where 'no food is forbidden',so it's a matter of trying to marry the two together...........incorporating my love of cooking and baking with low fat eating.So here is my first foray into low fat baking.I nearly cried when I realised there would be no butter.No butter in baking! Sacrilidge in my book,but I perservered and my efforts paid off these are DELISH! And only 2.5 per generously (and normal :) sized muffin..................

Banana and Malteser Muffins (adapted from a WW recipe)

200g flour
2 teaspoons baking powder
100g light brown/muscavado sugar
75g Maltesers crushed/chopped in half/whole - however you want them (I chopped mine in half)

1 medium egg
1 teaspoon vanilla essence
100ml semi skimmed milk
1 banana mashed
50 g low fat spread,melted

Simply sift the dry ingredients into one bowl.

Mix all the wet ingredients in a jug,making sure the egg is beaten.

Pour the wet into the dry ingredients and mix - being careful not to overmix or the muffins will be chewy and not fluffy.

Spoon the batter into a standard 12 hole muffin pan (Should fill them generously) and bake at 180 degrees for 10 - 15 mins depending on your oven.

DELISH! 12 very generous muffins at only 2.5 points each :D

And by the way,these are whipped up in about 10 minutes :D Bonus!
